What do you do when you only have a few items on hand in the kitchen? I had a couple of green tomatoes, red bell peppers, fruit, limes, eggs and juice.I decided to fry the green tomatoes and red bell pepper. This is a very simple dish that I made for lunch to go with some black-eyed peas that my daughter had cooked overnight in the crockpot. She made the peas with a tomato sauce, which was absolutely outstanding.
I made my own special sauce as a topping for the fried veggies. I used garlic Aioli mustard, Hickory & Cracked black pepper mustard sauce(someone sent that in one of those baskets for Mother’s Day), freshly-squeezed lime juice and a little Frank’s hot sauce.
Take all of the ingredients for the sauce and stir them in a bowl and blend to taste. In other words, a dab of this, a dab of that, but only a tiny bit of Frank’s hot sauce. I sliced the firm green tomatoes and red bell peppers, sprinkled salt and pepper on them, coated with flour and fried them in grapeseed oil. They cook fast, so do not overheat the oil. You can enjoy as an entree or appetizer.
